This cheese matures for 10-18 months in our cheese cellar, giving it a slightly spicy note. It was made on the fire in our alp “la Neirivue” from the farm's own raw milk.
Our happy cows eat over a hundred different herbs and grasses every day and drink the crystal-clear water of the Alps. The milk is therefore rich in unsaturated fatty acids.
